Apple and Goat Cheese Crumble

11 Golden Delicious apples
4 T. butter
4 T. brown sugar
12 oz. goat cheese
1½ c. heavy cream
1 tsp. garlic powder
1 T. bouquet garni
Salt and pepper
1 c. unbleached flour
6 T. butter or margarine
½ tsp. salt
1/3 c. cold water

Peel and core the apples.  Cut into ¼” dice.  Melt 4 T. butter in large skillet, add apples and brown sugar and cook over medium heat, stirring occasionally, until soft and somewhat caramelized.
Mix goat cheese, cream, garlic powder and bouquet garni.  Season to taste with salt and pepper.  Mixture should flow like frosting.
Stir ½ tsp. salt into flour.  Cut in 6 T.  butter until mixture resembles coarse meal.  Stir in enough water to make adherent crumbs.

Divide apple mixture among 24 small ovenproof glasses.  Spoon goat cheese mixture evenly over apple mixture.  Sprinkle crumb mixture on top of goat cheese mixture.  Place glasses on a baking sheet and bake in 400 degree F. oven until crumbs are browned.  Serve warm.  Serves 24. (If containers are not oven-safe, brown crumb mixture separately on cookie sheet at 425 degrees F., spoon over apples and cheese and warm in 225 degree oven.)
